Kanchipuram Idli


Raw Rice 1 cup
Idli Rice 1 cup
Urad Dal ¾ cup
Fenugreek seeds 3 tsp
Poha ¼ cup
Cumin 1 tbsp
Peppercorn 1 tbsp
Ginger powder 1 tbsp
Curry Leaves A few
Cashew Nuts A few
Salt As required

 

 

Method

  1. Wash and soak the urad dal and fenugreek together for 8 hours
  2. Wash and soak the idli rice and raw rice together for 8 hours
  3. Now drain water from urad dal and grind it to fine paste with the help of a mixer or grinder
  4. With adding less water grind the rice to a fine paste
  5. Mix both batters together with salt
  6. Cover it and allow it ferment overnight
  7. To a small pan add 2 tsp of oil
  8. Add crushed pepper, cumin and curry leaves
  9. Season it to the fermented batter and mix well] now grease idli plates or idli moulds
  10. Pour the batter and steam it for 15-20 minutes in regular idli steaming vessel
  11. Serve hot with desired chutney
